Tapas at Cascal

Went to dinner with friends last Friday in Downtown Mountain View at Cascal. That place gets busy, so I'm glad we had reservations. Had some very tasty sangria and food. My favorite was probably the crab and shrimp tostadito, which had a creamy mix of crab and shrimp underneath crisp lettuce, onions and tomatoes. It was all on top of a crispy tortilla so there was a nice contrast between crunchy and chewy. Some of the items that we ordered were a bit hit or miss. We ordered about seven different plates and I only liked four of them. The sizzling shrimp, hearts of palm salad, and duck confit gorditas were also delicious, but their ahi tuna was a little tough and the chicken livers were dry. I couldn't get a lot of photos because the lighting in the restaurant was not my friend. I wouldn't mind going back though to try more of their dishes.

Complimentary bread. Sadly, it was a little burnt.

Time Crunch
I can't believe how fast this year is going by. I'm getting married in six months! Eeek! Time to stop being lazy and actually finish up some planning. I already ordered my dress, and Kelly's tux is reserved as well. Now I'm on the hunt for accessories, mainly my veil and shoes. I would like to decide on a veil soon so I can schedule a makeup and hair trial with a potential vendor, but I'm so picky!
Another thing that needs to be done is sending out save the dates and finalizing the guest list. The list keeps ballooning and is larger than I ever thought it would be.

Meyer Lemons
I recently acquired some home grown Meyer lemons from a coworker last week and an trying to think of ways to cook with them. On Saturday I successfully roasted a chicken! I was a bit worried because after I stuck the bird in the oven, Kelly told me that our oven is incapable of roasting poultry. I guess he had some sort of Thanksgiving disaster a few years ago... After about 2 hours of me constantly checking the oven and the chicken, I had a beautiful roasted lemon chicken with vegetables. The chicken was moist and flavorful and the roasted vegetables had a lovely lemon butter taste. I can't wait to make this again. Recipe here!

Today I baked some cookies using this recipe. The cookies are soft and fluffy and the icing has just the right amount of tart and sweet. Since I am lacking a mixer of any kind, I had to do these completely by hand. Creaming butter and sugar together with a wooden spoon is not my idea of fun. Also, did not have powdered sugar so I made some by using a blender. I'm quite happy with how everything turned out :)
